Instructions

  1. Preheat the oven to 165ยฐC (325ยฐF).
  2. Put the pitted cherries, brown sugar, balsamic vinegar, ginger, Dijon mustard, cinnamon sticks, water and salt in a saucepan.
  3. Bring to a simmer and cook for 12 to 15 minutes, until the cherries are soft and broken down.
  4. Remove the cinnamon sticks, then blend until smooth. While blending, add the butter and keep blending until fully emulsified. Add a pinch more salt if needed and set the glaze aside.
  5. Peel the skin off the ham: score a line through it, then gently pull it away from the fat in one piece.
  6. Score the fat in a diamond pattern or lines about 2 cm (ยพ inch) apart.
  7. Place the ham on a lined baking tray and generously spoon one-third to half of the glaze over it, coating it fully.
  8. Roast for 20 to 25 minutes, then baste every 5 to 10 minutes, roasting for a total of 1ยฝ hours in all.
  9. Once glazed and caramelised, rest the ham for 10 minutes before serving.
