Chewy Fudgy Frosted Brownies
Ingredients
- Butter · softened1 cup
- Chocolate · coarsely chopped
- Sugar¾ cups + 1
- Brown sugar¼ cups
- Egg3
- Vanilla1 ½ tsp
- Flour⅔ cups
- Dutch process cocoa · powder2 tbsp + ⅓ cups
- Salt¼ tsp
- Chocolate chip1 cup
- Heavy cream3 tbsp
Instructions
- Melt the butter and chopped chocolate together in a heatproof bowl in the microwave (20-second bursts, stirring each time) or over low heat in a saucepan, then let cool for 5 minutes.
- Heat the oven to 350°F (177°C). Line the base and sides of a 9-inch square pan with parchment.
- Whisk the granulated and brown sugars into the cooled chocolate mixture, then whisk in the eggs and vanilla.
- Whisk in the flour, cocoa powder and salt until no dry pockets remain, then fold in the chocolate chips. The batter will be semi-thick.
- Spread the batter evenly in the pan and bake for 32-35 minutes, until the top looks set and a toothpick in the centre comes out with a few moist crumbs (not wet). Check at 30 minutes, since ovens vary.
- Cool the pan on a wire rack for 1 to 2 hours, then lift the brownies out using the parchment overhang.
- Beat the softened butter on medium speed for about 2 minutes until creamy. Add the confectioners' sugar, cocoa powder, cream or milk, vanilla and salt, beat on low for 30 seconds, then on high for 1 minute. Taste and add more salt if wanted.
- Spread the frosting over the mostly cooled brownies (slightly warm is fine), then cut into squares with a long, sharp knife wiped clean between cuts.
