Instructions

  1. Bring a pot of water to a boil over high heat.
  2. Rinse the potatoes and peel them if desired. Cut them on a ridged mandoline, slicing down then turning the potato 90 degrees before each cut, repeating until you reach the end.
  3. Once the water boils, add two large pinches of salt and the vinegar, stirring to dissolve.
  4. Add the waffle-cut potatoes and boil until fully tender but not falling apart, about 6 to 8 minutes. Drain and set aside.
  5. Heat oil about 2 inches deep in a wok or large pot to 375°F (190°C) over medium heat.
  6. Fry the potatoes in small batches for 60 seconds, moving them to a wire rack, until all are done.
  7. Freeze the rack of potatoes for about an hour to firm up, then transfer to a freezer bag or container. Store for up to 3 months.
  8. Mix all the sauce ingredients on the day of serving, adjust to taste, and keep extra sealed in the fridge.
  9. For deep-frying: heat oil in a wok or dutch oven to 375°F (190°C), set a wire rack over a baking sheet, and fry frozen fries until lightly golden and crisp, about 4 minutes. Drain on the rack and serve immediately or keep warm in the oven.
  10. For baking or air-frying: preheat the oven to 475°F (246°C), or 425°F (218°C) for convection or an air fryer. Spread frozen fries on a pizza screen or baking sheet, optionally spritz with oil, and bake 12 to 15 minutes until crisp. Toss with salt and serve with sauces.
