Preparación
- Heat 1½ tbsp of the oil in a large frying pan over medium-high heat.
- Add the mushrooms and cook for 3–4 minutes until golden brown. Remove to a bowl.
- Heat the remaining 1½ tbsp oil in the pan, add the onion and fry over medium-high heat for 5–6 minutes, until the edges start to brown slightly. Keep moving the onion so it doesn't burn.
- Stir in the flour and cook for one minute while stirring.
- Add a splash of the hot stock and whisk into the onion and flour to form a thick paste. Add the rest of the stock a splash at a time, whisking constantly to keep the sauce smooth.
- Once all the stock is in, add the milk and thyme. Keep stirring as the sauce thickens while heating.
- Once thickened, add the sherry, salt and pepper. Taste and adjust the seasoning if needed.
- Add the cooked chicken and mushrooms and stir. Cook for a couple of minutes until the chicken is hot throughout.
- Serve over rice or pasta, if desired, and finish with parsley.
