  1. Marinate the chicken with yogurt, turmeric, salt, half of the green paste and garam masala for one hour.
  2. Heat the ghee in a wok, add the onions and fry until nicely golden.
  3. Add a little salt to the onions so they brown faster.
  4. Add the remaining green paste and cook until the raw smell is gone.
  5. Add the chilli powder and mix well.
  6. Add the tomatoes and cook until soft.
  7. Add the marinated chicken and mix well.
  8. Add one cup of water, cover, and cook on medium heat until the chicken is almost done.
  9. Stir in the boiled potatoes, cook for one minute, then transfer everything to another vessel.
  10. Make the rice: boil water in a large pot, add salt and the soaked basmati rice, and stir gently.
  11. Cook uncovered for 10-15 minutes until each grain is nearly done but still firm in the centre, then switch off the heat and drain.
  12. Spread the rice on a thali to cool.
  13. Layer the rice over the gravy, scatter the saffron milk, melted ghee, coriander, and fried onions over it, cover, and cook on dum over very low heat for 10-15 minutes.
