Chicken Caesar Smash Tacos
Ingredients
- Mayonnaise½ cups
- Yoghurt¼ cups
- Dijon1 tbsp
- Worcestershire sauce1 tbsp
- Lemon1 tbsp
- Garlic · grated1 clove + 1 tbsp
- Saltto taste
- Romaine lettuce · finely shredded½ heads
- Pepperoncini · sliced½ cups
- Parmesan cheese · grated¼ cups
- Ground chicken1 lb
- Black pepper
- Tortilla6–8
- Avocado oil
Instructions
- Whisk the sauce ingredients until smooth.
- Toss the romaine, pepperoncini, Parmesan and about half the Caesar sauce until well coated. Whisk the rest of the sauce with 1 to 2 tablespoons of water to thin it for dipping.
- Mix the seasoning into the ground chicken. Spread the chicken over each tortilla, pressing it all the way to the edges or slightly past.
- Heat a thin layer of oil (2 tablespoons or more for the crispiest crust) in a skillet over medium heat. Working in batches, place the tortillas chicken-side down and press with a spatula for 15 to 30 seconds. Cook 2 to 3 minutes more until the chicken is browned and fully cooked. Flip and cook about 1 minute more to crisp the other side.
- Remove the tacos, fold each in half, and keep warm in a low oven on a baking sheet if needed. Fill with the Caesar salad just before eating. Serve with the remaining sauce for dipping.
