Chicken & Cheese balls

Ingredients

Instructions

  1. Preheat the oven to 180°C and line a baking tray with baking paper.
  2. Squeeze the air out of the chip packet and seal it again, then crush the chips with a rolling pin into coarse crumbs.
  3. In a large bowl, combine one third of the crushed chips with the chicken, grated cheddar, mayonnaise, salt and pepper, mixing until a stiff, sticky mixture forms.
  4. Lightly grease your hands. Flatten portions of the mixture into 16 disks, place a cheese cube in the centre of each, and enclose the cheese.
  5. Roll each piece into a neat ball and set on a plate.
  6. Spread the remaining crushed chips on a large plate and pour the beaten eggs into a wide bowl.
  7. Dip each ball in the egg, then roll it through the chips to coat it.
  8. Place the balls on the lined tray and bake for 12–15 minutes, until the cheese has melted and the crumb is golden and crisp. You may air fry them instead.
  9. Arrange on a platter, garnish with chopped parsley and serve with your dipping sauce.
