Ingredients

Instructions

  1. Put the chicken, salt, egg white and potato starch in a small bowl and beat until the egg white is a little frothy. Let it marinate while you prepare the other ingredients.
  2. Stir together the chicken stock, oyster sauce and white pepper in a small bowl for the sauce.
  3. Boil the noodles for one minute less than the package says, then drain and rinse with cold water. Drizzle with oil and toss to coat so they don't stick together.
  4. Heat a frying pan over high heat until hot, then add the remaining vegetable oil, ginger and garlic.
  5. Swirl the aromatics, then add the chicken in a single layer and fry without disturbing it until about halfway cooked.
  6. Stir-fry the chicken until almost fully cooked through.
  7. Add the carrots, cabbage and bell pepper and keep stir-frying until they just start to wilt.
  8. Add the noodles and toss everything together.
  9. Add the sauce and keep stir-frying, tossing everything together.
  10. Add the scallions and snow peas and stir-fry until the snow peas are bright green.
