Chicken fried rice
Ingredients
- Rice · cooked3 cups
- Salt1 pinch
- Garlic1 tbsp
- Tamari3 ½ tsp
- Rice wine vinegar¾–1 tsp
- Sugar¼–⅓ tsp
- Crushed pepper¼ tsp
- Oil2 tbsp
- Chili pepper1–2
- Scallion2 sprigs
- Bell pepper¼–½ cups
- Chicken150 g
- Egg1
- Black pepper · crushed1 pinch
Instructions
- Wash the rice at least twice, cook it until al dente, drain, and cool it completely. Do not use hot rice.
- In a bowl, mix the chicken with a pinch of salt, a pinch of pepper and the egg white (or cornstarch in place of egg). Set aside.
- In a small bowl, stir together the soy sauce, sugar and vinegar, adding any hot sauce you like.
- Heat 1½ tablespoons of oil in a wok or pan and stir-fry the chicken for 3 to 4 minutes, until almost cooked through. Push it to the side.
- Whisk the remaining egg, pour it into the pan and scramble until firm but still soft. Remove the chicken and egg to a plate.
- Wipe the wok clean, add half a tablespoon of oil, then fry the garlic for 30 seconds.
- Add the scallion whites, chilies if using, and bell peppers, and toss on the highest heat for 2 minutes, keeping the peppers crunchy.
- Add the rice, sprinkle with black pepper and pour in the sauce. Stir-fry on the highest heat for 1 minute.
- Return the chicken and egg to the pan and fry until hot, one to two minutes. Taste and add more salt or sauce if needed, then serve hot.
