- Garlic · peeled4 cloves
- Scallion · diced2
- Shallot · quartered2
- Ham1 piece
- Shiitake mushroom5
- Bok choy6 oz
- Noodle8 -5
- Soy sauce1 tbsp
- Oyster sauce1 tbsp
- Fish sauce½ tbsp
- Sesame oil1 tbsp
- Salt2 ½ tsp

Instructions
- Preheat a clay pot or heavy stockpot until hot. Add a little oil and sear the chicken (and Jinhua ham if using) until golden brown on each side.
- Flip the chicken, then add the ginger, garlic, shallot and scallions between the pieces so they become fragrant.
- When the chicken is golden, pour in 2 liters of boiling water. It will bubble vigorously against the hot pot.
- Simmer on low for about 15 minutes until the chicken is tender.
- Meanwhile, slice the mushrooms and cut the baby bok choy.
- Remove the chicken and let it cool. Discard the aromatics and skim the fat from the broth.
- Add the mushroom slices and noodles to the broth and cook for 4 to 10 minutes, depending on the type and thickness of the noodles.
- Meanwhile, remove the chicken meat from the bone, shred it into bite-size pieces, and season with soy sauce, fish sauce, oyster sauce, garlic powder and sesame oil.
- When the noodles are nearly done, add the bok choy and salt to taste. Serve noodles, broth and chicken in bowls, topped with chili flakes if desired.
