- Chicken200 g
- Black pepper · powder¼ tsp
- Salt0.13 tsp
- Tamari4 tsp
- Five spice½–1 tsp
- Noodle150 g
- Oil1 tsp + 1–2 tsp + 2 tbsp
- Garlic2 cloves
- Scallion2 + ¼ cups
- Bell pepper¼ cups
- Carrot¼ cups
- Cabbage¼ cups
- Hot sauce1 ½ tbsp
Instructions
- Marinate the chicken with pepper, salt, soy sauce and five-spice or garam masala, cover and set aside.
- Boil 2 to 2½ litres of water in a large pot. Add the noodles and cook following the packet timing, adding 1 tsp oil and salt to the water if the packet says so.
- Wash and cut the vegetables while the noodles cook.
- Drain the noodles when al dente, without overcooking. Immediately toss with 1 to 2 tsp oil and set aside.
- Heat 1 tbsp oil in a wok or pan and fry the garlic for 30 seconds.
- Add the chicken and sauté over medium heat until cooked through. If the pan gets too dry, add 1 to 2 tbsp hot water (not cold). Check a piece is cooked, then set the chicken aside if using a wok.
- Add 1 more tbsp oil and raise the heat to high.
- Sauté the white parts of the spring onions for 1 minute.
- Add the bell pepper, carrot and cabbage and sauté for 1-2 minutes.
- Add the spring onion greens, chilli sauce, noodles and soy sauce, with a dash of salt if needed. Return the chicken to the pan if set aside.
- Stir-fry for 1-2 minutes. If the noodles look dry, add a little oil. Serve hot.
