Chicken Pakora Recipe | Indian style fried chicken bites
Ingredients
- Chicken250 g
- Onion¼ cups
- Chili pepper1–2
- Garlic · paste¾ tbsp
- Chili powder¾–1 tsp
- Garam masala¾–1 tsp
- Turmeric¼ tsp
- Salt⅓ tsp
- Curry2 sprigs
- Chickpea flour6 tbsp
- Rice flour3 tbsp
- Egg1
- Oil
Instructions
- In a bowl, mix the besan, rice flour, salt, turmeric, chilli powder and garam masala. Taste and add more salt if needed.
- Add the ginger garlic paste, onion, curry leaves and green chilies.
- Cut the chicken into strips or cubes about 1 by ¾ inch, add them to the bowl with the egg white, and mix.
- Add water only as needed to make a thick, stiff mixture that is not loose like batter.
- Heat oil in a deep pan on medium flame. Test by dropping in a little dough: it should sizzle and rise slowly without browning. Keep the flame at medium.
- Slide the chicken pieces into the oil one at a time, without crowding the pan.
- Leave undisturbed for 2 minutes, then stir and fry until golden and crisp.
- Drain on a steel colander or cooling rack. Fry the rest in batches; refry for extra crispness if you like.
- Serve hot as an appetizer with green chutney or masala tea.
- Air fryer option: preheat the air fryer to 180°C (360°F) for 10 minutes. Grease the basket well and place the chicken pieces spaced apart. Air fry for 5 to 6 minutes, turn, and cook another 5 to 6 minutes.
