Modo de preparo
- Blanch the whole green beans in well-salted boiling water for 1-2 minutes, until they are your desired texture. Drain and plunge into ice water to set the colour.
- Dry the beans with paper towels, trim the stem ends and chop into small pieces.
- Grind the toasted sesame seeds, sugar and salt in a mortar or spice grinder, then toss the green beans with the mixture.
- Put the shredded carrot and sliced onion in a bowl, sprinkle with the salt, mix and leave for 10-15 minutes.
- When the carrot is limp, squeeze out as much water as you can by hand.
- Dress the carrot and onion with the olive oil, red wine vinegar and parsley.
- Mix the ground chicken with the sake, soy sauce, sugar and ginger juice in a non-stick pan, breaking up any clumps.
- Cook over medium-high heat, breaking the meat into small crumbles with a spatula, until no liquid remains and the chicken is well cooked.
- Beat the eggs, sugar and salt until the yolks and whites are thoroughly combined.
- Heat a non-stick pan over medium-low heat until warm but not scorching.
- Pour in the egg and scramble vigorously with chopsticks or a whisk into small curds, until crumbly and no longer wet.
- Spread the rice in a thin layer in the bento boxes, leaving a small gap at the edge. Fill the gap with the carrot salad and tomatoes.
- Top the rice with the chicken, egg and green beans in any arrangement you like.
