Chicken Teriyaki Bento Box Recipe
Ingredients
- Chicken breast · boneless skinless400 g
- Sake3 tbsp
- Ginger · grated½ tsp
- Salt0.13 tsp
- Potato starch2 tsp
- Soy sauce1 tbsp
- Sugar1 tbsp
- Vegetable oil1 tbsp
- Rice · cooked1
Instructions
- Cut the chicken breast in half along the centre line to make two pieces.
- Find where the muscle fibres change direction in the large piece and cut it there, so each piece can be sliced against the grain into 1/3-inch (about 8 mm) slices.
- In a bowl, mix the chicken with 1 tablespoon sake, 1/2 teaspoon grated ginger and 1/8 teaspoon salt. Add 2 teaspoons potato starch and work it in until every piece is evenly coated.
- In another bowl, mix 2 tablespoons sake, 1 tablespoon soy sauce and 1 tablespoon sugar until the sugar dissolves to make the teriyaki sauce.
- Heat a large frying pan over medium-high heat. Add 1 tablespoon vegetable oil, then the chicken in a single layer, starting with the larger pieces.
- Once all the chicken is in, start turning the pieces over, beginning with the ones added first.
- When the chicken is mostly cooked (it need not be fully cooked through), wipe out excess oil with a paper towel and pour in the teriyaki sauce.
- Keep flipping the chicken until it is coated in a thick glaze.
- Pack the teriyaki chicken into a bento box with 1 batch of cooked Japanese short-grain rice and side dishes.
