Chicken with Cajun Cream Sauce
Ingredients
- Avocado oil1 tbsp
- Chicken breast1 lb
- Cajun seasoning2 ½ tsp
- Butter1 tbsp
- Shallot · minced thinly sliced1
- Tomato paste1 tbsp
- Flour1 tbsp
- Heavy cream¾ cups
- Chicken broth1 cup
- Mashed potato
- Green bean
Instructions
- Cut the chicken breast into thinner pieces horizontally, or pound until thinner.
- Season the chicken with Cajun seasoning. Heat the oil in a skillet over medium-high heat.
- Sear the chicken 3-4 minutes per side, until golden and the internal temperature reaches 165°F. Remove and set aside on a plate.
- Wipe out any overly browned bits from the pan. Lower the heat to medium-low, then add the butter and shallot and sauté until softened and fragrant.
- Add the tomato paste and Cajun seasoning and sauté 3-4 minutes, until the tomato paste turns a rich color. Add the flour and cook 2-3 minutes to cook out the floury taste.
- Add the broth gradually, whisking after each addition until smooth. Whisk in the heavy cream, then simmer 5-10 minutes until slightly thickened.
- Return the chicken to the pan, partially submerged in the sauce, and serve with a spoonful of sauce over the top.
