Chicken with Creamy Mustard Sauce 20210902
Ingredients
- Chicken thigh700 g
- Olive oil1 ½ tbsp
- Salt¾ tsp
- Black pepper½ tsp
- Heavy cream½ cups
- Dijon mustard1 tbsp
- Mustard1 tbsp
- Tarragon2 tsp
- Parsley2 tsp
Instructions
- Season the chicken with the salt and pepper.
- Heat the oil in a large pan that is not non-stick over medium-high heat. Place the chicken smooth side down and cook for 4 minutes, until deep golden. Turn and cook the other side for 3 minutes, until cooked through to an internal temperature of 72°C/162°F. Transfer to a plate.
- If using chicken breast (prepared as in Note 1), sear on high heat for 2 minutes per side, to an internal temperature of 67°C/153°F.
- Scrape any loose black bits out of the pan and discard them.
- Return the pan to medium heat. Add the cream and both mustards, and stir with a wooden spoon until the mustard dissolves, scraping up the brown bits from the pan.
- Once the sauce is hot but not simmering, stir in the salt, pepper and herbs if using. If it gets too thick, loosen it with a little water.
- Place the chicken on plates and spoon the sauce over it.
