chickpea flour chocolate chip cookies (vegan-friendly!)
Ingredientes
- Coconut oil · melted½ tazas
- Brown sugar½ tazas
- Egg2
- Vanilla1 cdta.
- Chickpea flour1 ½ tazas
- Baking soda½ cdtas.
- Salt · for sprinkling on top½ cdtas.
- Chocolate chip⅔ tazas
Preparación
- Preheat the oven to 350°F and line a large baking sheet with parchment.
- Whisk the melted and cooled coconut oil (not hot, so the egg does not cook), brown sugar, egg, egg yolk and vanilla for at least 1 minute until smooth and creamy.
- In a separate bowl whisk the chickpea flour, baking soda and salt. Add to the wet mixture and mix until well combined, then fold in the chocolate chips.
- Scoop the dough with a medium cookie scoop and roll into balls on the prepared sheet. Lightly flatten the tops, or leave them as is for thicker cookies.
- Bake 9-11 minutes until the edges are slightly golden. Cool on the sheet for 5 minutes, then move to a wire rack. Sprinkle with coarse sea salt if desired. Makes 12 cookies.
