- Chickpea flour½ cups
- Nutritional yeast1 tbsp
- Flax seed1 tbsp
- Baking powder½ tsp
- Salt¼ tsp
- Turmeric¼ tsp
- Paprika¼ tsp
- Black salt0.13 tsp
- Black pepper
- Oil1 tsp
- Garlic1 clove
- Onion · chopped¼ cups
- Asparagus2 tbsp
- Chili pepper½
- Bell pepper · chopped2 tbsp
Instructions
- Blend all the batter ingredients (chickpea flour through black pepper, with the water) and set aside.
- Heat 1/2 teaspoon of oil in a skillet over medium heat. Add the onion and garlic and cook until translucent, about 3 minutes.
- Add the vegetables and green chile and cook for 2 more minutes.
- Stir in the red bell pepper or tomato. Add any spices or chopped greens you like at this point.
- Pour the batter over the vegetables. Cook about 2 minutes until the edges start to set. Drizzle 1/2 teaspoon of oil around the edges, then scramble and keep cooking. Scrape the bottom and let it sit undisturbed for about 2 minutes between scrambles.
- Keep cooking until the edges begin to dry out, about 4 to 5 minutes in total.
- Take off the heat and rest 1 to 2 minutes, then break into smaller chunks. Season generously with black pepper and add a little salt. Garnish with cilantro if you like. Serve on multigrain toast or in tacos or burritos.
