Ingredients

Instructions

  1. Mix the flour, warm water, yogurt, oil, sugar, yeast and salt in a large bowl until a dough forms, then knead on a floured surface for 8–10 minutes until smooth and elastic.
  2. Cover the dough with a damp towel and let it rise in a warm place for 1–2 hours, until doubled in size.
  3. Divide the risen dough into 6 equal portions, roll each into a ball, flatten slightly and roll out.
  4. Put ¼ cup shredded cheese in the center of each round, fold the edges over the filling, pinch to seal into a stuffed ball, then gently flatten into a ¼-inch-thick disk without tearing it.
  5. Cook the bacon, scramble the eggs and top them with a slice of pepper Jack cheese.
  6. Stir the butter, grated garlic and chili oil together in a bowl for the chili garlic butter.
  7. Heat a cast-iron or heavy-bottomed pan over medium-high. Cook one dough round 1–2 minutes per side, until bubbles form on one side and golden spots appear on the other. Repeat with the rest.
  8. Brush the hot naan generously with chili garlic butter, top with bacon and eggs, add ketchup and chives, and serve right away.
