- Mix the flour, warm water, yogurt, oil, sugar, yeast and salt in a large bowl until a dough forms, then knead on a floured surface for 8–10 minutes until smooth and elastic.
- Cover the dough with a damp towel and let it rise in a warm place for 1–2 hours, until doubled in size.
- Divide the risen dough into 6 equal portions, roll each into a ball, flatten slightly and roll out.
- Put ¼ cup shredded cheese in the center of each round, fold the edges over the filling, pinch to seal into a stuffed ball, then gently flatten into a ¼-inch-thick disk without tearing it.
- Cook the bacon, scramble the eggs and top them with a slice of pepper Jack cheese.
- Stir the butter, grated garlic and chili oil together in a bowl for the chili garlic butter.
- Heat a cast-iron or heavy-bottomed pan over medium-high. Cook one dough round 1–2 minutes per side, until bubbles form on one side and golden spots appear on the other. Repeat with the rest.
- Brush the hot naan generously with chili garlic butter, top with bacon and eggs, add ketchup and chives, and serve right away.
