- Grind the coriander, green chillies, garlic, roasted chana dal, chaat masala, salt, ice cubes and a splash of water into a thick, smooth chutney; taste and adjust the salt if needed.
- Thinly shred the cabbage into a large bowl. Cut the capsicum into thin juliennes and add it. Slice the carrot diagonally, stack the slices, cut into juliennes and add. Thinly slice the onion and add it.
- Dice the 250 g paneer and mix gently with lemon juice, salt, freshly crushed black pepper and Kashmiri red chilli powder so the paneer stays intact.
- Add the chilli garlic sauce to the vegetables gradually and mix until evenly coated.
- Spread soft butter on one side of each bread slice and green chutney on the inner side of both slices. Spread a layer of the coleslaw on one slice, top with the seasoned paneer, and cover with the second slice.
- Heat a tawa on medium flame with a little butter. Place the sandwich on it, cover with a plate and press gently. Once the bottom is golden and crisp, butter the top, flip carefully, press again and toast until the second side is crisp and golden on both sides.
