Ingredients

Instructions

  1. Devein and clean the prawns well. Stir the salt, sugar and water together in a bowl, add the prawns and let them rest for 20 minutes.
  2. Drain the prawns completely. Mix the cornflour, plain flour and pepper, sprinkle over the prawns and let rest for 10 minutes.
  3. Heat the oil in a pan until hot. Fry the prawns one by one, turning once, for about 3–4 minutes until they curl into a C shape, turn crisp and are cooked through. Remove to a plate.
  4. Wipe the pan clean with paper towel and add more oil. Fry the garlic until fragrant, then add the chillies, capsicum, onion or spring onion whites and salt.
  5. Stir-fry on high heat for 1–2 minutes until the peppers are half cooked but still crunchy.
  6. Add the chilli sauce, chilli paste (if using), soy sauce, vinegar, sugar, pepper and 2 tablespoons water. Bring to a boil and cook until bubbling, then adjust the sauces to taste.
  7. Turn off the heat, add the fried prawns and toss well. Garnish with green onions and serve immediately.
