Ingredients

Instructions

  1. Coarsely crack the 6 grams of whole black peppercorns with a mortar and pestle, or crush them in a freezer bag with a rolling pin.
  2. In a bowl, whisk the 2 tablespoons oyster sauce, 1 tablespoon Shaoxing wine, 1 teaspoon soy sauce, 1 teaspoon toasted sesame oil and most of the cracked pepper, reserving a little for garnish.
  3. Add the 1 teaspoon potato starch and mix until no lumps remain. Stir in the 350 grams beef tenderloin to coat evenly and marinate while you prepare the vegetables.
  4. Heat a frying pan over medium-high heat until hot. Add the 1 tablespoon vegetable oil, then arrange the beef in a single layer using tongs, leaving as much marinade in the bowl as possible.
  5. Fry the beef until golden brown on one side, then flip each piece and brown the other side.
  6. Add the 140 grams onion, 100 grams bell pepper and 12 grams garlic to the pan, turn the heat to high and stir-fry, tossing often so everything cooks evenly.
  7. When the onions turn translucent, add the remaining marinade and toss until the beef is glossy and evenly coated with sauce.
  8. Garnish with the reserved black pepper to taste and serve with rice.
