Instructions

  1. Mix the flour and salt. Divide the bowl roughly in half. Pour 140 g hot water into one half, stir, and let cool for 5 minutes.
  2. Dissolve the yeast in 90 g cold water and pour it into the other half of the flour. Stir.
  3. Knead everything into a rough dough. Add 1 tbsp vegetable oil and knead until absorbed. Rest 10 minutes.
  4. Knead until smooth, shape into a log, wrap and proof 20 minutes.
  5. Heat a wok until smoking, add 2-3 tbsp oil, then reduce to low and pour in the beaten eggs. Stir quickly with chopsticks to scramble into small bits. Set aside.
  6. Bring 2 cups of water to a boil, turn off the heat and soak the mung bean noodles for 1-2 minutes. Drain and rinse in cold water.
  7. Cut the noodles into 1/2 inch pieces and mix with 1.5 tsp dark soy sauce, then coat with 2 tsp sesame oil. Set aside.
  8. Dice the garlic chives and coat them with 1.5 tbsp sesame oil. Mix the noodles, scrambled egg, chives, dried shrimp and garlic. Season with 2.5 tbsp soy sauce, 1 tsp 5-spice powder and 2/3 tsp salt and mix well. Set aside.
  9. Divide the dough into 12 pieces of 45-50 g each. Roll each into a ball, then flatten into a 5-inch round wrapper.
  10. Place filling in the middle of each wrapper, fold in half, press out air, and seal the edge with pleats.
  11. Pan-fry in a cast iron skillet over medium heat until golden, 2-3 minutes per side.
