Ingredients
- Oil2 tbsp
- Onion½
- Garlic2
- Bacon120 g
- Rice · cooked2 cups
- Egg3
- Scallion¾ cups
- Shaoxing wine1 tbsp
- Oyster sauce1 tbsp
- Soy sauce1 tbsp
- Sesame oil1 tsp
- White pepper¼ tsp
Instructions
- Heat about 1 1/2 tablespoons of oil in a wok (or 2 tablespoons in a skillet) over high heat until smoking.
- Add the onion, garlic and bacon and cook until the bacon is light golden, about 1 1/2 minutes.
- Add the diced vegetables (frozen is fine) and cook for 2 minutes until defrosted and the water has evaporated.
- Add the rice and the sauce ingredients and cook for 1 1/2 minutes until the liquid has evaporated.
- Push the rice to the side. Add 1/2 tablespoon of oil to the cleared space, tilt the wok so the heat is over that space, pour in the egg and scramble it fully until cooked through.
- Add the green onion and stir the egg into the rice. Remove from heat and serve immediately.
