Instructions
- Slice the beef into 1/4-inch slabs, stack them and cut into thin julienne strips.
- Marinate the beef with 1/3 tsp salt, 1/4 tsp white pepper, 1 tsp dark soy sauce and 1/3 tsp baking soda. Mix well, then stir in 1 tbsp oil to coat. Set aside for 15 minutes.
- Peel the carrots, slice them into 1/8-inch slabs and cut into thin julienne strips.
- Thinly slice 5 garlic cloves, cut 3 scallions into stalks, and cut the dried red chilies into diagonal strips with scissors.
- Mix 1.5 tbsp light soy sauce, 1 tbsp oyster sauce, 1 tsp brown sugar and 1/2 tsp five-spice powder in a bowl.
- Heat a wok over high heat until smoking. Add 2.5 tbsp oil and swirl to coat.
- Add the beef in a single layer, separating the strips, and stir over high heat for 2 minutes until nicely charred. Remove the beef from the wok, tilting it to leave excess oil behind.
- Add the garlic, scallion whites, dried chilies and carrots. Stir over medium heat for 3 to 4 minutes until the carrots are slightly soft.
- Return the beef to the wok, pour in the sauce mixture and toss in the scallion greens. Mix well and serve with white rice.
