Chinese Sausage w/ Snow Peas
Ingredientes
- Sausage½ lb
- Snow pea½ lb
- Garlic
- Scallion2 pedaços
- Ginger · shredded
- Chili pepper · sliced thinly2
- Salt¼ colher de chá
- White pepper
- Molho shoyu1 colher de sopa
Modo de preparo
- Slice the sausage into pieces about ¼ inch (0.6 cm) thick.
- Wash the snow peas and pull off the fibrous string along one side of each pod. If you don't have snow peas, you can use another vegetable such as mushroom, bean sprout or lotus root.
- Crush and peel the garlic. Crush the 2 white pieces of spring onion. Cut the 2 slices of ginger into thin shreds. Slice the red chilies thinly.
- Heat the wok until you feel strong heat rising, add a little oil and swirl it around, then add the sausage. With a non-stick wok, skip the oil because the sausage gives off fat.
- Stir-fry the sausage for 2–3 minutes, until it looks slightly translucent. Fry a little longer if you like it firmer.
- Add a little more oil to the same wok, then add all the aromatics and the snow peas. Cook over medium heat until the snow peas are soft and most have some black charred spots.
- Add the white pepper, salt to taste and 1 tablespoon of soy sauce. Stir so the seasoning spreads evenly, then return the sausage to the wok and mix everything together.
- Plate and serve with white rice.
