Ingredients

Instructions

  1. Mix the all-purpose flour and salt, then pour in the boiling water in batches, stirring to combine. Let cool for a couple of minutes.
  2. Form a rough dough, add 2 tsp vegetable oil and knead until absorbed. Cover and rest 15 minutes.
  3. Knead again for a few minutes until smooth, shape into a log, cover and rest 30 more minutes.
  4. Meanwhile, add vegetable oil, diced onion, minced garlic and minced ginger to a wok. Stir over medium-low heat for about 10 minutes until the garlic is golden brown.
  5. Turn off the heat and add chicken stock, soy sauce, oyster sauce, Chinese cooking wine, sugar and black pepper to taste. Mix thoroughly.
  6. Combine the ground pork with the cooked aromatics and stir in one direction for 3-5 minutes.
  7. Add diced scallion and sweet corn and mix thoroughly to finish the filling.
  8. Roll the rested dough into a long even log and divide into 40 pieces (11-12 grams each). Dust lightly with flour and cover with a damp towel.
  9. Flatten one piece with your hand, dust with a little flour and roll into a round wrapper.
  10. Put about 1.5 tbsp of filling in the middle of the wrapper. Pinch a pleat on the bottom half and then on the top half, working along the edge, then pinch the tip closed to seal.
  11. To steam, line the steamer with a damp cheesecloth or parchment with holes poked in it, place the dumplings in, start with cold water, and steam for 12 minutes once the water boils.
