- Sugar½ cups
- Vanilla½ tsp
- Honey1 tsp
- Salt¼ tsp
- Egg1
- Peanut butter½ cups
- Flour1 ¼ cups
- Baking soda1 tsp
- Dark choc chips / US semi-sweet chips150 g
Instructions
- Put the butter in a microwave-safe bowl and microwave on high in 20-second bursts until nearly melted, then stir with a wooden spoon to finish melting.
- Stir both sugars into the butter, then add the egg, vanilla, honey and salt and stir until combined.
- Add the peanut butter and stir until smooth; a few small lumps are fine.
- Add the flour and scatter the baking soda over the top, mixing until most of the flour is incorporated. Add most of the chocolate chips, reserving about 2 1/2 tablespoons, and mix until no flour is visible.
- Cover and refrigerate the dough for 1 hour (up to 2 days).
- Preheat the oven to 190°C/375°F (170°C fan-forced) and line 2 trays with baking paper.
- Roll the dough into 15 or 16 balls about 4 cm (1.6 in) across and place them 6 cm (2.5 in) apart on the trays.
- Bake for 12 minutes, until golden at the edges and lighter golden on top.
- As soon as they come out, press the reserved chocolate chips onto the tops. Cool on the tray for 10 minutes, then move to racks to cool fully before storing in airtight containers.
