- Dutch process cocoa · powder¼ cups
- Baking powder1 tsp
- Salt½ tsp
- Egg4
- Sugar¾ cups + 3 tbsp
- Vegetable oil¼ cups
- Buttermilk¼ cups
- Vanilla1 + 1 tsp
- Coffee · powder1 tsp
- Heavy cream1 ½ cups
- Marshmallow2 tbsp
- Chocolate · finely chopped1
- Corn syrup1 tsp
Instructions
- Heat the oven to 350°F (177°C). Grease a 12×17-inch pan, line it with parchment, then grease the parchment too.
- Sift the cake flour, cocoa powder, baking powder and salt together and set aside.
- Whip the egg whites with 1/4 cup (50g) of the sugar on high for 4–5 minutes, until medium peaks form (slightly drooping, not stiff). Move them to another bowl.
- In the same bowl, beat the yolks with the remaining sugar on high for 1 minute. Add the oil, milk, vanilla and espresso powder and beat on high for 2 minutes. Mix in half the whites on low for 10 seconds, then the rest on low for 10 seconds.
- Sift in the dry mixture and fold with a spatula until just combined. Do not overmix.
- Spread the batter very thinly in the pan and smooth the top by shimmying the pan. Bake 12–14 minutes, until the top springs back lightly when touched. Do not overbake.
- While it bakes, lay a parchment sheet or thin towel on the counter and dust it with about 2 Tablespoons of cocoa powder.
- Loosen the hot cake from the pan edges, invert it onto the dusted sheet, peel off the baking parchment, then roll it up from the narrow end slowly and gently with the sheet. Let it cool completely rolled, about 3 hours (up to 1 day). Do not chill it before unrolling.
- Whip the cream, 3 Tablespoons sugar and 1 teaspoon vanilla on medium-high until medium to stiff peaks form, about 2–3 minutes. Beat in the marshmallow creme.
- Unroll the cake, spread the cream evenly leaving a 1/2-inch border, and roll it back up without the sheet. Place seam-side down on a wire rack over a baking sheet.
- Put the chopped chocolate and corn syrup in a bowl. Heat the 1/2 cup cream until it just begins to simmer (not a rapid boil), pour over the chocolate, wait 2–3 minutes, then stir until smooth and glossy.
- Pour the ganache over the cake, spooning any drips back on top. Refrigerate at least 30–60 minutes before slicing.
