Ingredients

Instructions

  1. Line a square baking dish on the base and sides with baking paper, leaving an overhang on each side.
  2. Mix the crushed biscuits, melted margarine and 1 tablespoon of cocoa powder. Press the crumbs evenly into the dish and chill the base while you make the filling.
  3. Put 2 tablespoons of cold water in a small bowl and sprinkle the gelatin over it. Stir, then leave for 3 minutes to bloom. Once firm, microwave for 15 seconds until melted, then set aside for 5 minutes to cool. Do not boil it.
  4. Whip the chilled cream with an electric beater for 2 minutes, until stiff peaks form. Set aside.
  5. Whisk the cottage cheese, castor sugar and remaining 3 tablespoons of cocoa powder for 1 minute until soft and smooth. Add the cooled gelatin and whisk on high for 10 seconds until fully combined.
  6. Fold half the whipped cream into the cottage cheese mixture, then fold in the rest until fully combined.
  7. Spread the filling over the chilled base and smooth the top level. Refrigerate for at least 6 hours, or overnight.
  8. Once set, lift the baking paper to remove the cheesecake from the dish and place it on a board.
  9. Cut into 20 pieces and dust with cocoa powder before serving.
