Chocolate chip Banana Bread | Baking With Akis
Ingredients
- Banana5
- Butter125 g
- Brown sugar150 g
- Chocolate300 g
- Walnut80 g
- Self rising flour220 g
- Baking soda1 tsp
- Salt½ tsp
- Vanilla · powder½ tsp
- Egg2
- Food coloring · paste1 tsp
- Sugar1–2 tbsp
Instructions
- Put the banana pieces, butter and sugar in a frying pan and cook for 5 to 10 minutes, until most of the moisture has evaporated and the bananas are so soft they fall apart when stirred.
- Take off the heat, transfer to a bowl and refrigerate for 1 to 2 hours.
- Preheat the oven to 180°C (356°F) fan.
- Once chilled, beat in the eggs, vanilla and food coloring until well combined. The mixture must be cool so the chocolate does not melt.
- In another bowl, mix the self-rising flour, baking soda and salt. Add the banana mixture and fold with a fork until just combined and coming together, without overmixing.
- Stir in the walnuts and chocolate with a spatula just until distributed.
- Pour the batter into a greased, flour-dusted 10 x 30 cm cake pan. Sprinkle granulated sugar over the top.
- Bake for 45 minutes to 1 hour, until a knife inserted in the centre comes out clean.
- Cool on a wire rack for 15 minutes, then turn out and let cool completely. Dust with caster sugar and/or cocoa powder if you like.
