Chocolate Chip Cookie Bars
Ingredients
- Flour2
- Baking soda1 tsp
- Cornstarch1
- Salt½ tsp
- Butter · melted¾ cups
- Brown sugar1 cup
- Sugar⅓ cups
- Egg1
- Vanilla2 tsp
- Chocolate chip1 cup
Instructions
- Preheat the oven to 350°F (177°C). Line a 9-inch square baking pan with parchment, leaving overhang on the sides so the bars can be lifted out.
- In a large bowl, whisk together the flour, baking soda, cornstarch and salt.
- In a medium bowl, whisk the melted butter, brown sugar and granulated sugar until no brown sugar lumps remain. Add the whole egg, the extra yolk and the vanilla and mix well; the mixture will be thick.
- Pour the wet ingredients into the dry ingredients and mix until combined. The dough will be soft, slick and thick. Fold in the chocolate chips, doing your best to combine them even though they may not stick well.
- Press the dough evenly into the prepared pan. Sprinkle lightly with flaky sea salt if desired, and press a few extra chocolate chips on top if you like.
- Bake for 30 to 34 minutes, until lightly browned at the edges. Do not over-bake. A toothpick inserted in the center should come out mostly clean.
- Cool the bars in the pan on a wire rack for at least 1 hour. Once relatively cool, lift them out using the parchment and cut into squares.
- Store leftover bars covered at room temperature for up to 1 week.
