Chocolate Chip Cookie Dough Blended Oats
Ingredients
- Oats½ cups
- Milk⅓ cups
- Egg1
- Baking powder¼ tsp
- Cinnamon · ground1
- Maple syrup1 tbsp
- Almond butter2 tbsp
- Banana½
- Vanilla½ tsp
- Chopped nuts of choice1 tbsp
- Cacao nibs1 tsp
- Chocolate chip3 tbsp
Instructions
- Blend the oats, milk, egg, baking powder, cinnamon, maple syrup, 1 tablespoon almond butter, banana and vanilla (if using) until smooth.
- If using nuts and cacao nibs, blend them for just a few seconds so they stay fairly whole.
- Pour half the batter into a greased mug or oven-safe ramekin. Add the remaining tablespoon of almond butter and 1½ tablespoons chocolate chips to the centre, then cover with the rest of the batter.
- Scatter the remaining 1½ tablespoons chocolate chips on top.
- Preheat the air fryer to 325°F (160°C). Place the mug inside and cook for 20 minutes, until golden brown and a toothpick inserted in the centre comes out clean.
- Alternative: microwave for 2 minutes in a mug holding at least 20 ounces, as the batter rises fast and can overflow.
