Chocolate Chip Cookie Pizza
Ingredients
- Flour2 cups
- Cornstarch2 tsp
- Baking soda1 tsp
- Salt½ tsp
- Butter · softened¾ cups
- Brown sugar¾ cups
- Sugar¼ cups
- Egg1
- Vanilla2 tsp
- Chocolate chip1
- Ice cream
Instructions
- Preheat the oven to 350°F (177°C). Lightly grease a 12-inch or larger pizza pan.
- In a medium bowl, whisk together the flour, cornstarch, baking soda and salt. Set aside.
- Beat the softened butter and both sugars on medium speed until creamy and smooth, about 3 minutes. Add the egg and vanilla and beat on high until combined, about 1 minute, scraping down the bowl as needed.
- On low speed, mix in the dry ingredients until combined, then add the chocolate chips with the mixer still on low. The dough will be thick, soft and sticky.
- Press the dough into the pan with your fingers to about 3/4 inch thick, keeping it centered and away from the edges.
- Bake for 20 to 24 minutes, until puffed and lightly browned on top. Do not overbake.
- Cool the cookie pizza on the pan on a wire rack before garnishing or slicing. Optionally, press a few chocolate chips into the top while still warm.
- Cover leftovers and store at room temperature for 2 to 3 days, or refrigerate for up to 5 days.
