Ingredients
- Dark chocolate225 g
- Butter80 g
- Egg6
- Cocoa powder1 tbsp
- Sugar50 g
- Whipped cream200 ml
Instructions
- Chop the dark chocolate into small pieces, weigh it, and add the butter to it.
- Heat a little water in a pan.
- Whisk the egg yolks with half of the caster sugar in a bowl.
- Once the water is hot, set the chocolate bowl over the simmering water, making sure its base does not touch the water. Melt the chocolate completely, then set it aside.
- Add the cocoa powder to the whisked yolks and whisk again.
- Set the yolk bowl over the pan of water and keep whisking constantly. Once it thickens, take it off the heat and keep whisking.
- Gradually whisk the melted chocolate into the yolk mixture until fully combined, then rest it for a couple of minutes.
- Whip the chilled cream, cover it, and return it to the refrigerator.
- Beat the egg whites until they start to foam, add a pinch of salt, then keep beating and add the remaining caster sugar in batches until stiff peaks form.
- Fold the egg whites into the chocolate mixture in batches, always folding in one direction.
- Fold in 3/4 of the whipped cream, reserving the rest for garnish.
- Spoon the mousse into ramekins, cover with cling film, and refrigerate for 3 to 6 hours.
- Before serving, top with the reserved whipped cream and chocolate shavings.
