Chocolate Pudding Pots
Ingredients
- Egg2
- Sugar⅓ cups + 2 tsp
- Vanilla1 ½ tsp
- Cocoa powder2 tbsp
- Cornstarch1 ½ tbsp
- Milk1 cup
- Heavy cream2 ¼ cups
- Chocolate150 g + 2 tbsp
- Salt
Instructions
- Whisk the egg yolks and sugar in a medium saucepan until combined.
- Add the vanilla, cocoa, cornflour and a small splash of milk, and whisk until smooth with no lumps.
- Add the remaining milk, cream and salt and whisk to combine.
- Heat over medium, whisking now and then at first and more often as it thickens, making sure to reach the edges.
- Once gentle bubbles break the surface (about 5 minutes), stir for another 15 seconds, then take it off the heat.
- Add the chocolate and stir until melted. Do not boil the mixture for longer, as this can weaken the cornflour's setting power.
- Pour quickly into 5 small glasses or ramekins, then cool on the counter for 15 minutes and refrigerate uncovered for 3 hours until set.
- To serve, whip the cream on high with an electric beater for 1 to 1 1/2 minutes until softly whipped.
- Spoon a dollop onto each pudding, sprinkle with chocolate, and serve.
