1. Line a baking sheet with wax paper or nonstick foil.
2. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second bursts, stirring between each, for 2–3 minutes, until completely melted and glossy.
3. Dip each sandwich cookie in the melted chocolate to coat it fully, then place it on the lined sheet.
4. Decorate each cookie with 2 broken pretzel halves as antlers, 2 chocolate chips as eyes and a red cinnamon candy as the nose. Use a toothpick dipped in the leftover melted chocolate to attach the white chocolate chips.
5. Refrigerate for at least 30 minutes, until the chocolate is set.
