Chocolate Self Saucing Pudding Recipe
Ingredients
- Flour1 cup
- Baking powder2 tsp
- Sugar½ cups
- Cocoa powder½ cups
- Salt½ tsp
- Milk½ cups
- Butter½ sticks
- Egg1
- Vanilla1 tsp
- Brown sugar1 cup
Instructions
- Bring a few cups of water to the boil.
- In a medium mixing bowl, combine the flour, baking powder, sugar, cocoa powder and salt with a wooden spoon. Set aside.
- Melt the butter in the microwave or in a small saucepan over low heat. In a small bowl, whisk the melted butter, milk, egg and vanilla together with a fork until combined.
- Pour the wet ingredients into the dry ingredients and fold gently until just combined. Do not overmix, or the batter will turn tough.
- Spread the batter evenly into a 9-inch (23 cm) round dish, or a 20×30 cm or 9×13 inch rectangular dish.
- In a small bowl, whisk the brown sugar and cocoa powder together, then sprinkle evenly over the batter.
- Measure 1 1/4 cups (310 ml) of boiling water into a heatproof jug. Pour it slowly over the back of a spoon onto the pudding, so the topping stays undisturbed.
- Bake at 160°C / 325°F for 35 to 40 minutes, until bubbling at the edges and the sponge springs back when pressed. Let cool for 5 to 10 minutes before serving.
