Christmas Ham Focaccia: Bake it Easy

Ingredients

Instructions

  1. Grease a 9 x 13 inch pan with nonstick spray, then drizzle it with 2 tablespoons (25 g) of the olive oil.
  2. In a medium bowl, mix the focaccia mix and yeast. Add the water and 2 tablespoons (25 g) of olive oil and stir until combined. The dough will be very sticky and loose. Cover and rest for 10 minutes.
  3. Pinch 4 ounces (113 g) of the diced ham into the dough, then knead gently for about 1 minute until the ham is evenly spread.
  4. Scoop the dough into the prepared pan and turn it to coat both sides with oil. Gently stretch it to the edges of the pan. Cover and let rise at room temperature for 30 to 60 minutes; for the shorter rise, it will only be slightly puffy.
  5. Meanwhile, preheat the oven to 425°F with the rack in the center.
  6. After rising, uncover the dough and scatter the remaining 8 ounces (227 g) of diced ham over it. Drizzle with the remaining 2 tablespoons (25 g) of olive oil. With greased hands, dimple the dough down to the bottom of the pan without piercing it.
  7. Bake for 15 minutes. The top will still be pale but no longer sticky.
  8. Meanwhile, in a small saucepan over medium-low heat, stir the honey, brown sugar and spices constantly for 2 to 3 minutes, until runny and the sugar has dissolved.
  9. Take the focaccia out of the oven and brush the spiced honey glaze over the top, reaching the sides.
  10. Return to the oven and bake 15 to 20 minutes, until deep golden with some ham pieces charred and crisp.
  11. Take out of the oven and sprinkle immediately with flaky salt. Cool in the pan for 5 minutes, then move to a rack or cutting board. Do not leave it in the pan longer than 5 minutes.
