Chuck Roast Burnt Ends
Ingredients
- Beef1 + 2 tbsp
- The Bbq Rub2 tbsp
- Bbq sauce1 cup
- Beef broth½ cups
Instructions
- Preheat the smoker to 275°F and add pecan wood chunks for smoke.
- Cut the chuck roast into 1-inch cubes. Season them with The BBQ Rub and TX Brisket rub, then set them on a raised rack with space between each piece.
- Smoke the pieces for 1 1/2 to 2 hours.
- Move the burnt ends to an aluminum half-size pan. Mix the BBQ sauce with the beef broth, pour it over the pieces, cover the pan with foil and return it to the smoker.
- Cook for 2 hours, or until tender. Squeeze a couple of pieces with your fingers: they are done when you can almost squeeze them in half.
- Remove from the pan and serve.
