Cinnamon Apple Loaf
Ingredients
- Apple · diced1 + 3 cups
- Demerara sugar1 ½ tbsp
- Cinnamon · powder2 ¼ tsp
- Brown sugar3 tbsp + ¾ cups
- Ginger powder½ tsp
- Allspice¼ tsp
- Flour1 ¾ cups
- Baking powder1 tsp
- Baking soda½ tsp
- Salt¼ tsp
- Yoghurt¾ cups
- Egg2
- Canola oil½ cups
- Vanilla1 tsp
- Walnut1 cup
Instructions
- Preheat the oven to 200°C/390°F (180°C fan), with the shelf in the middle.
- Line a 21.5 x 11.5 x 7 cm (4.5 x 8.5 x 2.75 in) loaf pan: grease it with canola oil, then line the long sides and base with one piece of paper, leaving overhang.
- Mix the demerara sugar and 1/4 tsp cinnamon for the topping and set aside.
- Mix the cinnamon apple ingredients (diced apple, 1 tsp cinnamon, 3 tbsp brown sugar, 1 tsp cinnamon powder... see note) in a bowl and set aside while you make the batter.
- Whisk the dry ingredients in one bowl and the wet ingredients in another.
- Pour the wet mixture into the dry bowl and whisk until just smooth. Stir in the cinnamon apple (with all its juices) and the walnuts. The batter should be thick but dollop-able.
- Scrape the batter into the pan and smooth the top.
- Fan the thin apple slices in three overlapping lots, arranging them over the top (about 3/4 of the slices is enough to cover), then sprinkle with the cinnamon sugar.
- Bake 60 minutes. Cover loosely with foil and bake a further 25 minutes, or until a skewer inserted in the centre comes out smooth.
- Rest 15 minutes in the pan, lift out using the paper overhang onto a rack, and cool at least 1 hour before slicing.
