Instructions

  1. Mix the dark brown sugar and cinnamon powder in a bowl until well combined. This is the filling.
  2. Whisk the vanilla extract and 1 tbsp milk into the sifted icing sugar, then add more milk a little at a time, whisking after each addition, until the icing reaches a runny consistency.
  3. Dissolve the instant dry yeast in the warm milk (about 45-50°C) and set aside for 5 minutes.
  4. Mix the flour, sugar and salt in a bowl. Make a well in the centre, then add the yeast milk and the oil and mix well.
  5. Knead the dough on a floured surface for about 5 minutes until soft. Place it in an oiled bowl, cover with cling film and leave at room temperature for about 2 hours, until risen.
  6. Punch the air out of the dough lightly, add a little flour, and roll it into a rectangle about 15 x 12 inches.
  7. Spread the softened butter over the dough, then sprinkle evenly with the cinnamon-sugar mixture.
  8. Roll the dough up gently, brushing the far edge with milk as you finish. Trim the ends, then cut the roll into 12 equal pieces by halving repeatedly.
  9. Grease a pan with butter and place the rolls cut side down. Preheat the oven to 45°C, then switch it off, cover the tray with cling film and let the rolls rise in the oven for 10-15 minutes.
  10. Brush the rolls with milk. Preheat the oven to 180°C and bake for 20-30 minutes.
  11. Cool the rolls on a wire rack for about 10 minutes, then drizzle with icing and serve.
