Clams w/ Garlic Chive Shoots Recipe
Ingredients
- Clam200 g
- Chive350 g
- Garlic3 cloves
- Ginger1 ½ tsp
- Chili pepper3–5 pieces
- Fish sauce1 ½ tbsp
- Oyster sauce1 ½ tbsp
Instructions
- Cut the garlic chive shoots into sticks about 2 inches long and set aside.
- Thaw the clam meat by rinsing it a couple of times in room-temperature water, then drain and set aside.
- Heat a wok until smoking hot, add some oil and swirl it around. Add the garlic (3-4 cloves), 1.5 tsp minced ginger and some diced Thai bird's eye chilies.
- Stir briefly, then add the clam meat and cook for 1 to 2 minutes. Push the clams to one side and tilt the wok so the heat concentrates on the empty side, then add the chive shoots and cook until wilted, a couple of minutes.
- Mix everything together, quickly add the fish sauce and oyster sauce (1.5 tbsp each), toss, and serve.
