CLASSIC Catalan-Style Spinach | Delicious Recipe from Barcelona Spain
Ingredients
- Extra virgin olive oil2 tbsp
- Garlic2 cloves
- Raisin¼ cups
- Pine nut¼ cups
- Spinach15 oz
- Salt
- Black pepper
Instructions
- Soak the raisins in warm water for 5 minutes, then drain and squeeze out excess water. Finely mince the garlic.
- Heat a large frying pan over medium heat. Toast the pine nuts, stirring constantly, for 4 to 5 minutes until lightly roasted. Remove and set aside.
- In the same pan over the same heat, add the olive oil and minced garlic. Stir constantly for 20 to 30 seconds until fragrant.
- Add the spinach in batches, turning it until it wilts easily, so the pan does not get overcrowded.
- Once all the spinach is lightly wilted, add the reserved pine nuts and drained raisins. Season with sea salt and black pepper, mix well, then remove from the heat.
- Transfer to a large serving dish and serve warm or at room temperature.
