Ingredients

Instructions

  1. Peel, core and cut the apples into D-shaped slices. Cook the chopped bacon in a frying pan over medium-high heat in its own fat until about three-quarters cooked, then remove it.
  2. Cook the apple slices in the same bacon fat until about three-quarters cooked.
  3. Whisk two eggs with castor sugar in a large bowl. Add the butter, sifted flour, baking powder (optional), salt and milk, and whisk until smooth.
  4. Over low heat, pour in enough batter to make a thin pancake. Scatter the cooked bacon and apple on top and cook until the pancake moves freely in the pan.
  5. Flip the pancake and cook for a little while longer, then remove it from the pan. Serve with maple syrup.
  6. Hot chocolate: melt a good amount of dark chocolate in a double boiler. When it is liquid, add the same amount of milk and a pinch of salt, and mix well.
  7. Pour the hot chocolate into a glass. Pipe whipped cream on top and sprinkle with cinnamon powder.
