Classic Homemade Coffee Cake Recipe
Ingredients
- Brown sugar2 ½ cups
- Flour4 ¾ cups
- Cinnamon · ground4 tsp
- Butter3 sticks
- Salt1 ¼ tsp
- Sugar1 ¼ cups
- Vanilla1 tbsp
- Egg5
- Baking powder2 tsp
- Milk1 ½ cups
Instructions
- Preheat the oven to 350°F.
- Make the filling by combining all its ingredients in a bowl until no visible chunks remain.
- For the streusel, cut the butter into the flour, brown sugar and cinnamon in a large bowl with a pastry knife until the butter pieces are about ¼ inch across; some larger and smaller pieces are fine. Set aside.
- Cream the butter in a stand mixer with the paddle on high speed for 5 to 7 minutes, until light and fluffy.
- Add the sugar and cream on medium-high for 3 to 4 minutes.
- Add the vanilla, then the eggs one at a time, mixing each until fully incorporated. Scrape the bowl before the next step.
- Whisk the flour, salt and baking powder in a separate bowl.
- On low speed, add half the flour mixture and mix. Slowly pour in all the milk and mix until combined.
- Add the remaining flour and mix until fully incorporated. Scrape the bowl, then mix on low for 1 to 2 more minutes.
- Spread half the batter evenly in a greased 13x9-inch casserole dish.
- Sprinkle the filling evenly over the batter and gently press it flat.
- Spread the remaining batter over the filling, covering it completely.
- Sprinkle the streusel evenly over the top.
- Bake at 350°F for about 50 to 55 minutes, until firm in the centre or reaching 190 to 195°F internally.
- Cool on a rack slightly before slicing.
