Ingredients

Instructions

  1. Heat the olive oil in a large frying pan over medium heat.
  2. Peel the potatoes and cut them into bite-sized pieces about 2 cm (3/4 inch) thick.
  3. Add the potatoes to the hot oil, then stir and turn them every 3 to 4 minutes so they fry evenly.
  4. Meanwhile, thinly slice the onions and the garlic.
  5. Fry the potatoes until golden and cooked through, about 25 to 30 minutes; a toothpick should slide through easily.
  6. Remove the pan from the heat and drain the potatoes into a colander set over a heatproof bowl, keeping the oil.
  7. Heat the same pan over medium heat and add 1/4 cup (60 ml) of the reserved oil.
  8. After a couple of minutes, add the sliced onion and garlic and stir, turning every 1 to 2 minutes.
  9. Cook for about 10 minutes until the onions are lightly browned.
  10. Return the potatoes to the pan, add the smoked paprika, season with sea salt and black pepper, and mix well.
  11. Transfer to a large serving dish, garnish with fresh parsley, and serve warm or at room temperature.
