CLASSIC Spanish White Bean Stew | One of Spain's Most Iconic Recipes

- Extra virgin olive oil¼ cups
- Baguette2 slices
- Tomato1
- Garlic6 cloves
- Onion1
- Bell pepper1
- White wine vinegar1 tbsp
- Paprika · smoked½ tsp
- Cumin · ground½ tsp
- Potato2
- White bean · cooked1 jar
- Vegetable broth3 cups
- Salt
- Black pepper
Instructions
- Heat the olive oil in a stockpot over medium heat.
- After a couple of minutes, add the baguette slices, the tomato (cut side down) and the garlic cloves. Sauté for 4 to 5 minutes until lightly golden, then remove and set aside.
- In the same pot over the same heat, add the chopped onion and green pepper, stir into the oil, and stir every 1 to 2 minutes so they sauté evenly.
- After 5 minutes, when the vegetables are lightly sautéed, add the vinegar, paprika and cumin and stir quickly. Add the chopped potatoes and season with salt and pepper, then add the drained, rinsed white beans and the vegetable broth. Raise to high heat and stir gently.
- Meanwhile, put the fried bread, tomato and garlic into a tall container and blend with a hand blender until smooth (a food processor, stand blender or NutriBullet also works).
- Once the broth boils, stir in the purée and mix until fully combined. Cover and simmer for 20 minutes, or until the potatoes are just cooked through.
- Transfer to shallow bowls and serve at once.
