Ingredients

Instructions

  1. Preheat the oven to 170°C / 340°F. Separate the egg yolks from the whites and set the yolks aside.
  2. Beat the egg whites with 1/4 cup (50g) of the sugar until medium peaks form. Set aside.
  3. In another bowl, beat the softened butter, the 1/3 cup (65g) of sugar, the condensed milk and the vanilla until light and fluffy. Add the egg yolks and beat to combine.
  4. Sift the cake flour and baking powder. Add half to the batter and mix, then add the rest and mix until combined.
  5. Fold a dollop of the beaten whites into the batter to loosen it, then fold in the remaining whites.
  6. Grease a 9x5 inch loaf pan with oil and line it with parchment paper. Spread the batter evenly in the pan.
  7. Bake at 170°C / 340°F for 45 to 55 minutes, until a tester inserted in the centre comes out clean.
  8. Let the cake cool completely before serving.
